A new and upcoming high-end Japanese concept restaurant in the heart of London’s Soho district. Located at 84 Wardour Street, London, MOI, by the MAD Restaurant group reached out to Roneford Catering with a brief that would blend their culinary vision with sustainable Commercial Kitchen Designs whilst keeping to their aesthetically pleasing interior.
The Vision
Working closely with ex-Gordon Ramsey Executive Chef and the Head of Beverage at MAD Restaurants, the brief for MOI Restaurant was to deliver a fully bespoke Commercial Kitchen and Bar Design for a contemporary fine-dining concept, with emphasis on
- energy efficiency
- workflow ergonomics
- unique bar & kitchen aesthetics
- seamless operational functionality

The Design
Our team at Roneford Catering brought MOI’s vision to life with a fully bespoke kitchen and bar design, crafted to meet the demands of a premium fine dining experience. Two commercial kitchens and two bar areas — across both floors — were designed to deliver seamless service, combining precision cooking with striking visual impact.
The open show kitchen, cocktail bar and Japanese inspired grill and omakase bar enhance the guest experience, while the back-of-house areas are built for high-volume service, supporting smooth workflows and consistent delivery.

Upstairs, the bar showcases bespoke stainless steel fabrication, with bottle coolers set flush into the counter and matching pull out keg trolleys for a refined finish. Working alongside Beyond Bars, the Tayer system was integrated with its signature hexagonal design to create a striking, efficient service station.
Smart, Sustainable Equipment
Every piece of equipment was carefully selected for its efficiency, reliability, and longevity.
- Rational combi ovens reduce energy use by up to 70% and consolidate multiple cooking functions into one unit. (Source: Rational AG)
- Adande drawers help maintain stable temperatures with up to 50% less energy use. (Source: Adande UK)
- Foster & Fagor refrigeration, Williams meat agers, and Angelo Po modular systems ensure sustainable performance while supporting high-spec culinary operations. (Source: Energy Star , Angelo Po)
These choices reflect a modern, energy-conscious approach that complements MOI’s elevated dining concept.
