9 September 2026… // The Elysium Collection, a new family of British hotels, spas and health clubs, is delighted to announce its first hotel, Elysium St Mawes, which will open early 2027 on the waterfront in St Mawes, overlooking the harbour towards Falmouth. The opening marks the restoration of the village’s first purpose-built hotel. 

Set opposite the quay, the 56-bedroom hotel will feature a waterfront restaurant and café, six family rooms and a spa with an indoor thermal pool, sauna, steam room, cold plunge and two treatment rooms, creating a year-round coastal escape.

Built around the idea of time well spent, Elysium St Mawes will offer a relaxed, welcoming take on luxury, with warm, intuitive service and a strong sense of place. Standout wellness experiences and seasonal dining will come together within a thoughtfully restored building to create a home from home where guests can slow down, switch off and enjoy their stay at their own pace.

At the heart of the hotel will be a new restaurant led by Stéphane Delourme, the Elysium Collection’s executive chef, who spent more than two decades as head chef at Rick Stein’s The Seafood Restaurant before becoming group chef for the wider restaurant group. Menus will celebrate the best of Cornish produce in a Mediterranean style menu. Delourme will create food that is simple in spirit and ingredient-led, with an emphasis on flavour, provenance and the pleasure of eating well. 

Alongside it, the hotel’s café/brasserie will offer a more informal place for coffee, pastries and light bites during the day. Come the evening the space will evolve into a brasserie/wine bar offering pinchos and tapas.  

 
Wellness will be an important part of the Elysium St Mawes experience, with a considered offering shaped around its coastal setting. Alongside an indoor thermal pool, sauna, steam room and cold plunge, two treatment rooms will offer TEMPLESPA treatments designed to restore and relax, helping guests leave feeling calmer and refreshed.

The Elysium Collection has been created around a simple idea: helping guests make better use of their time away. Rather than offering formal luxury, the collection focuses on thoughtful service, restorative spaces and locations where guests can switch off from the moment they arrive.

The building, originally constructed in 1904 by the St Austell Brewery, is currently undergoing a transformation in collaboration with 3DReid, the architecture and design studio behind Gleneagles. Interiors will balance character and comfort, combining natural materials, layered textiles, considered lighting and locally inspired finishes to create spaces that feel individual and connected to St Mawes. The transformation reflects the collection’s commitment to preserving landmark buildings while retaining their heritage and sense of place.

The same attention to detail will extend throughout the guest experience. Elysium Collection have formed partnerships with local companies to provide a wide range of activities which will constantly evolve throughout the year. From sailing and paddle boarding in the summer to guided walks in the winter, tailored experiences will be provided enabling guests to experience all that this beautiful part of Cornwall has to offer, delivering unforgettable memories. The aim is simple: to make it easy to arrive, settle in and feel immediately at home.

Overlooking Carrick Roads at the mouth of the Percuil River, St Mawes provides a natural setting for the first Elysium Collection hotel. The village is known for its sailing culture, waterfront restaurants and galleries, with beaches, coastal walks and the harbour all within easy reach. Ferries cross regularly to Falmouth, while days can be spent swimming, kayaking, paddleboarding or exploring the quieter creeks and coastline of the Roseland Peninsula. Elysium St Mawes is approximately 40 minutes by car from Truro railway station, with direct Great Western Railway services from London Paddington. Cornwall Airport Newquay is approximately 50 minutes by car from the hotel.

Elysium St Mawes will be the first opening from The Elysium Collection, with further hotels set to open in Surrey and the Lake District.  Elysium St Mawes opens on 4 January 2027.
